This is a really yummy, easy and 'cheats' soup so it can't be cooked up quick. Less than 30 mins from start to finish.

Heat up a litre of chicken stock and a litre of water in a saucepan
throw in some chopped vegies of your choice. I like onion, celery, carrot
Bring to the boil and add 1 cup of risoni until almost cooked.
shread a bbq chicken breast and add it to the pot.
Season with salt and pepper if desired.
I also like to add a dash of sesame oil at the end and stir through...just gives it a little flavour hit that i like, but you could play around with this basic recipe and make it your own...a little chili, some garlic, corn, or replace the risoni with some basmatti rice for a rich thick chicken and rice soup...lovely for winter and goes down easily. Keeps well in the fridge for a day or two and freezes well also.
