| | CARIBBEAN CHICKEN
2 x 150 g chicken meat
2oz [60g] chopped onions
3oz [80g] green pepper
10fl oz [280ml] chicken stock [1/2 cube]
2 teaspoons cornflour
2 rings Canned pineapple with 2 tablespoons juice
2 teaspoons tomato ketchup
2 teaspoons curry powder
salt and pepper
1 medium banana
6oz [170] hot cooked rice
Pre heat oven to 350 or 180 . Brown chicken in non stick pan and place in casserole. Brown onions and peppers and add to chicken. Blend cornflour with pineapple juice. Place stock into frying pan, add pineapple, cornflour, juice ketchup, curry powder and seasoning . Bring to boil and pour over chicken. Bake in oven for 1 hour or until chicken is cooked. Peel banana slice in half length wise cut into pieces and stir into sauce just before serving. |
