Ham and Pea Soup
1 large onion, chopped
200g lean ham, chopped, I use soccer ball
1 stick of celery, chopped
1 large carrot, peeled and chopped
2 litres water
6 chicken stock cubes
150g risoni pasta (looks like rice)
1 cup frozen green peas
pepper to taste
1 Coat a large heavy based saucepan with cooking spray. Heat, add the onion, ham, celery and carrot. Cook for about 3 minutes.
2 Add the water and stock cubes, bring to the boil, lower heat, cover and cook for about 5 minutes.
3 Increase heat, add the risoni, cook uncovered, stirring occasionally for about 5 minutes. Stir in the peas, cook until heated through. Serve seasoned with pepper.
This soup becomes extremely thick as the risoni pasta continues to swell.
