This is one of my favourate recipes
SILVERBEET AND CHEESE POTATO PIE
2 medium potatoes, chopped
1 egg
1 cup self-raising flour
1 medium onion, chopped
8 silverbeet leaves, chopped (spinach)
60g ricotta cheese or cottage cheese
30g (2tablspoons) tablespoons grated tasty cheese
60g ham, chopped
1 egg yolk I use whole egg
1 tablespoon grated parmesan cheese
Boil, steam or microwave potatoes until tender, drain, cool. Push potatoes thorough sieve, (I don’t do this) stir in egg and sifted flour, turn onto floured surface, knead until smooth. Spray oil in pan, add onion, cook, stirring, until soft. Add silverbeet, cover, cook over high heat, stir in ricotta and tasty cheeses, ham and egg yolk. press half the mixture evenly over base of 20cm flan tin, spread with silverbeet mixture.
On floured surface, roll out remaining potato mixture large enough to cover silverbeet mixture trim edge. Spray with oil (or melted butter) sprinkle with parmesan cheese. Bake in moderate oven about 40 minutes or until golden brown.
