I make this all the time ... its excellent with a little side salad and always gets compliments when served as lunch for friends.

try it with different fillings like salon and sundried tomatoes... one of my favourite easy recipes

Have never made this, Linda - but I do the same as you when I make zucchini slice - I cook the bacon and onion first. I think the flavour is better that way.

1 1/2 cups milk (or milk & cream)
3 eggs
3 bacon rashes - chopped (I buy chopped bacon and freeze it)
1 small onion - chopped
1/2 cup SR flour
salt & pepper
1 cup grated cheddar cheese

Combine eggs and milk & salt & pepper. Add bacon, onion, flour and cheese.

Pour into medium quiche dish and bake at 200 for 40 mins (Less if fan forced)

I have added corn, mushrooms, asparagus at different times (not all together) to make it different. Just use the base and use your imagination.

I also prefer to cook the bacon & onion first. It turns out ok without it but I think it is nicer if it is cooked first.
