CHRISTMAS FRUIT CHEESECAKE 99
CHRISTMAS FRUIT CHEESECAKE
1 cup mixed dried fruit
¼
cup brandy (can use more if you like)
1 x 250g packet ginger nuts, crushed in a food processor
100g butter, melted
1 tbsp gelatin
2 tbsp water
250g cream cheese
2 tsp grated lemon rind
1/2 cup sugar
300ml cream, whipped until thick

Place the mixed fruit and brandy in a bowl and leave to soak overnight. (I just add the brandy to the fruit and heat it for 2 minutes in the microwave as never remember to soak it over night)
Mix the gingernut crumbs and melted butter together and press this mixture into a 20cm spring form pan. Allow it to chill while preparing the filling.
Combine the gelatin and water and leave to swell.
Beat the cream cheese, lemon rind and sugar together until soft and fluffy.
Dissolve the gelatin over hot water or in the microwave.
Into the cream cheese mixture fold the soaked fruit, dissolved gelatin and whipped cream. Pour the filling on to the base and refrigerate for about 2 hours or until set.
Notes:
I have found that the flavor of this cheesecake is much better if the cheesecake is made several days ahead. It does freeze well too.
This recipe halves easily and is then just the right quantity for a 15cm tin. The half size cheesecake will serve 6-8 (or maybe more, depending on the appetites and what else is on offer) it is quite rich but very more-ish.
