Oatbran Muffins (makes 4)
1 egg
1 egg white
3 Tablespoons oatbran
1 teaspoon baking powder
3 Tablespoons powdered skim milk
2 teaspoons splenda
1 teaspoon flavour extract such as vanilla, lemon, cinnamon, coconut, almond, cocoa or hazelnut.
Preheat oven to 160.
Place all the ingredients in a bowl and mix to combine.
Pour the mixture into nonstick or silicone muffin tins
Cook for 20 mins. Let muffins cool in the tins before removing.
Note If your muffin tin has space for more than 4 muffins, fill the empty spaces with water to prevent the tins from burning.
I tripled the recipe to make 12. I used 4 eggs instead of egg white.
I just realised that the last batch I made today (chocolate) I forgot the baking powder. They weren't as light as the first batch LOL Still taste nice though.
