Dukan Diet Recipes

This looks interesting but I haven't been able to find fat free cottage cheese or fat free mozarella. These things would make cooking a lot easier. Anyone had any luck?

There is a small section on vegetarian in his book. Tofu & seitan are ok but other things you have to be careful with. There doesn't seem to be very much info on it on his website either.

I'm interested to know if there's many vegetarian Dukan recipes ?
The yoghurt sounds do-able but I'm wondering what else he suggests vego protein wise.

Oatbran Muffins (makes 4)

1 egg
1 egg white
3 Tablespoons oatbran
1 teaspoon baking powder
3 Tablespoons powdered skim milk
2 teaspoons splenda
1 teaspoon flavour extract such as vanilla, lemon, cinnamon, coconut, almond, cocoa or hazelnut.

Preheat oven to 160.
Place all the ingredients in a bowl and mix to combine.
Pour the mixture into nonstick or silicone muffin tins
Cook for 20 mins. Let muffins cool in the tins before removing.

Note If your muffin tin has space for more than 4 muffins, fill the empty spaces with water to prevent the tins from burning.

I tripled the recipe to make 12. I used 4 eggs instead of egg white.

I just realised that the last batch I made today (chocolate) I forgot the baking powder. They weren't as light as the first batch LOL Still taste nice though.
