4 teaspoons veg oil
1 cup chopped onions
1 cup chopped red or green capsicums
2 cloves garlic finely chopped
1 sachet instant beef broth
450g minced veal or beef
80g cheddar cheese grated
80g plain dried breadcrumbs
1/2 cup tomato puree [ I use paste]
1/4 cup natural skim yoghurt
6 teaspoons parsley
2 teaspoons w. sauce
1 teaspoons chilli sauce
pinch pepper
Preheat oven to 190 C. In a 20 cm pan heat oil over med. heat, add onions, capsicums, garlic and broth. Saute until onions are translucent. In a mixing bowl combine sauteed veg. with remaining ing. Shape mixture into a loaf and place in loaf pan. bake until browned. About 45 mins.
Use cold and heat and serve 1/2 serving on toast for breakfast.
