Chinese Chicken
My mother had this recipe passed down from her Chinese friends. I could not remember it as it has been years since I have made the chicken this way.
So the good old WEB. I googled Simmered Chinese Chicken and up came the recipe.
Place one chicken in water on stove.
Add garlic and ginger (I use the bottled stuff)
1 Onion chopped roughly
Bring to boil and simmer for 10 mins.
Turn off stove and let stand in the water for 1 hour.
You will have a delicious chicken. The chicken will be white not brown but take the skin off and the meat is just so tender but does not fall apart
.
You will also have a delicious stock. Let stand in fridge over night and take off the fat and then make a vegetable soup with it.
The recipe actually says to put the skin of the garlic and ginger in and keep the other to make a sauce over the chicken but I don't do that.
