bran muffins (low carb)
1 teaspoon bi carb
1 teas cinnamon
1/2 mixed spice
2 Tablespoons oatbran
2Tablespoons rice bran
2 Tablespoons unprocessed bran
3 eggs
3 Tablespoons yogurt (I used kiwi friut activa)
1/4 teaspoon stevia
2 Tablespoons raisins
Mix all dry ingredients together in a bowl... mix all wet ingredients together in another bowl... combine... spoon into muffin tray and bake 15 min or till cooked through.
*you may find the mix too dry so be prepared to add a little milk...dont make it too wet.
* this makes 4 large muffins.. you can make smaller ones that are more band sized.
warm in micro and butter with a healthy cholesterol lowering marg or butter if you prefer. ( doc told me some of the constipation is caused by a lack of fat due to the diet... he suggested either half a doz fish tablets or I could use a Tablespoon of rice bran butter a day... I chose the rice bran butter!)
