Tofu Balls

250g Tofu (firm) I use Blue Lotus brand
40 gm raw rolled oats
1 egg beaten
1 - 2 egg whites
1 onion chopped and browned
1 tablespoon soy sauce
1 tsp fish sauce
16 pecan halves chopped, but not too finely. Needs that CRUNCH
1 grated carrot & 1 cup grated pumpkin (&/or zucchini)
SPICES: (I use Thai seasoning, coriander flakes, ginger powder, cumin, chilli powder, salt/pepper and a dash of Splenda) But you can use whatever spices you like.

Mash tofu, add all other ingredients. Mix well together. Form into balls using a soup spoon. This mixture should make at least 14 balls at half a point each.

Place onto a baking tray lined with baking paper and bake for 30 mins at 190’ or until brown.

This is one of my favourite low fat recipes. They can be eaten cold or heated on a bed of couscous or rice, with a bit of sweet chilli sauce… Delicious!

I love them so much that I usually double the recipe!
