This is a yummy soup and so easy to make...perfect for winter.
3 bacon rashers
1 carrot
2 sticks celery
1 onion
1 clove garlic
Chop and soften in a pan with a little olive oil and add a tablespoon of tomato paste, cook for a minute
add a litre of chicken stock
400 gram tin of chopped tomatoes
2/3 cup of lentils
oregano or rosemary and salt and pepper
cook for a 30-40 mins until lentils are soft. Yum!
It thickens as it cooks so is very filling. Serve as it or sprinkle with a little parmesan.
