eggplants?

Sliced thinly floured and grilled on the BBQ.
You can add seasoning if you like.
I find it takes on the flavour of other things so I just cube it and put in a casserole or curry.

steam it with lemon and garlic (yum)
anti pasto salad (sundried roma's, olives, feta, eggplant, and chargrilled eggplant with mesculin

I am a chef by trade and eggplant was the vegan option in most restaurants :)

Does anyone know any good eggplant recipies? I want to try out some healthy ways of having them and don't have much experience with egglant. Thanks!
